I love this no bake cereal bar recipe because they taste a lot like s’mores but without the campfire! They’re as easy as making rice krispy treats and every bite is chocolaty marshmallow goodness. Plus, this recipe is so easy the kids can make them on their own!

If you love Golden Grahams cereal you will love these easy no bake bars! You only need six ingredients and 15 minutes to make them.

The combination of marshmallows, melted chocolate, and graham cracker cereal is so good – the perfect summer treat for potlucks, camping, picnics, and BBQs! Or, just make a batch for any time.

Ingredients Golden Graham S’mores Bars

  • Graham cracker cereal like Golden Grahams
  • Mini marshmallows work best in this recipe because they’re mixed into the cereal bar mixture.
  • Butter
  • Chocolate chips – milk chocolate chips or semi-sweet chocolate chips are great.
  • Vanilla extract
  • Light corn syrup – I use this to melt the chocolate so you get a smooth sauce that doesn’t harden too much when you mix it with the cereal.

How to Make S’mores Bars

Melt: Combine the corn syrup, butter, and chocolate in a saucepan. Bring the mixture to a boil and stir constantly until the mixture is smooth. Take the pan off the heat and mix in the vanilla.

Mix: Pour the cereal into a large bowl and pour the chocolate mixture over the top. Stir to coat the cereal and then fold in the marshmallows.

Set: Press the s’mores mixture into a prepared pan. It helps to coat your fingers with cooking spray and use them to press the mixture into the pan. Let the bars cool before slicing them.

No bake s’mores bars should be kept in an airtight container in the refrigerator.

Can You Freeze No-Bake S’mores Bars?

I haven’t tried freezing them because they’re so easy to make, we just whip up a fresh batch when we get a craving! Plus, I’m not sure they will freeze well because most likely the cereal will soften as it thaws.

Recipe Tips for the Best No Bake Cereal Bars

  • You can use any graham cereal for this recipe and I think Cinnamon Toast Crunch would work well, too! I haven’t tried the recipe with actual graham crackers, but I think they would work but you would need to break them down into smaller pieces.
  • Don’t leave out the corn syrup – if you omit it, the chocolate will harden and it will be difficult to slice the bars and eat them.
  • The mixture is pretty sticky! Grease your hands and press it into the pan or grease a spatula if you want to press the mixture that way.

No Bake S’mores Bars

Easy No Bake S'mores Bars are a favorite summer treat full of Golden Grahams, marshmallows and chocolate!

Ingredients

  • ¾ cup light corn syrup
  • 3 Tablespoons butter
  • 1 package 11.5 ounces milk chocolate chips
  • 1 teaspoons vanilla extract
  • 9 cups Golden Graham cereal
  • 1 package 12 ounces mini marshmallows

Instructions

  • Spray a 9×13 inch pan with non-stick spray. Set aside.
  • In a saucepan heat light corn syrup, butter and chocolate chips over medium-high heat until it is boiling, stirring constantly.
  • Remove from heat and stir in vanilla extract.
  • Pour Golden Grahams into a large bowl and then pour in melted chocolate chip mixture over the top. Stir to completely cover cereal with chocolate sauce. Fold in marshmallows and press mixture in the prepared pan.
  • Cool until set.. Cut into bars and enjoy.
  • Store any leftovers in airtight container in refrigerator.
