How to Make the Filling
Place the cookies in a food processor and pulse them until the bread down to fine crumbs. Transfer the crumbs to a small bowl, add the melted butter, and mix to combine.
Place the crumb mixture in a 9″ pie plate. Press it evenly into the bottom and up the sides. To make this easy, use a glass or small bowl to press the crumbs.
Cover the pan with plastic wrap and chill the pie crust for at least 30 minutes or overnight.
Beat the cream cheese in a mixing bowl with an electric mixer until it’s creamy. Beat in the powdered sugar and vanilla until smooth.
In a separate large bowl, whip the heavy cream until it holds stiff peaks.
Use a spatula to gently fold the cream cheese mixture into the whipped cream. Do this carefully so the whipped cream doesn’t deflate.
Pour the filling into the chilled cookie crust. Smooth the top with an offset spatula. Cover the pie with plastic wrap and chill it for six to seven hours or overnight.
How to Decorate the Pie
Sprinkle one cup of cereal without the marshmallows around the edge of the pie. Sprinkle the marshmallow cereal over the top of the plain cereal.
Make the frosting by beating softened cream cheese with powdered sugar and vanilla until the mixture is smooth and creamy.
Transfer the frosting to a piping bag fitted with a star tip. Pipe the frosting in the center of the pie. Decorate the frosting with sprinkles. Slice and serve!
Tips for the Best Lucky Charms Pie
Cookie Crust: Be sure to break the cookies down to a fine sand-like mixture. There shouldn’t be any big chunks. A food processor makes this easy, but you can also place the cookies in a ziplock and break them with a rolling pin.
Cream Cheese Mixture: For best results, use room temperature ingredients.
Whipped Cream: Use cold heavy cream! It will whip up faster.
Chilling Steps: Be sure to follow the recommended chilling steps. The pie is best when it’s chilled overnight before decorating it and serving.
Decorations: Don’t decorate the pie with the cereal or sprinkles until you’re ready to serve it. The cereal will soften as it sits and the marshmallows and sprinkles will stain the pie. Also, start by adding the plain cereal first and topping it with the marshmallows. This will keep the marshmallows from staining the top of the pie.
Cream Cheese Frosting: You can omit the frosting or use whipped cream for decoration instead.
FAQ
I like to use a 9″ pan, but you can use an 8″ pie pan. You will just get a thicker pie.
You can, but the marshmallow cereal will stain the filling when you slice it. For this reason, I only use the cereal for decoration.
