I love an easy chocolate bark recipe, and this one is so cute! If you haven’t had Oreo thins, you’re missing out. And they work so well as the base for this St. Patricks Day dessert.

This leprechaun bark is really adaptable, so if you don’t like mint chocolate, don’t leave just yet! You can use regular M&M’s and any flavor of Oreo that your heart desires.

The most important thing is that you decorate with plenty of green so you don’t get pinched! Oh, and you of course have to make sure that you sprinkle a little gold on there so people really believe that this is a special leprechaun recipe.

Ingredients for Leprechaun Bark

  • Mint M&M’s – This will be one of the topping on your leprechaun cookie bark. If you can’t find mint M&M’s, regular green M&M’s will work!
  • Chocolate Chips – I prefer to use semi-sweet in this recipe, but you could you milk chocolate or dark chocolate!
  • Light Green Melting Wafers – If you’re unable to find light green wafers, you could use yellow! You just need a lighter color to swirl with the green melting wafers.
  • Green Melting Wafers – The green melting wafers will help give a nice festive color to your leprechaun bark.
  • Lucky Charm Marshmallows – You’ll only need a few marshmallows out of the cereal to put on top of your leprechaun bark. Use what’s left in this Lucky Charms Ice Cream!
  • Gold Sugar Sprinkles – You can find these sprinkles at your local hobby store or on the baking aisle at your grocery store.
  • Mint Oreo Thins – If you’re not a fan of mint chocolate, you can use regular oreo thins!

How to make Leprechaun Bark

Line a baking sheet with parchment paper and then place Oreo thins on top until the parchment paper is covered. Set that aside.

In a medium sized mixing bowl, melt the chocolate chips. Most chocolate chip packages will have instructions on the back that will tell you how to melt the chocolate without burning it.

Once melted, pour the chocolate evenly over the Oreo thins. Note: The chocolate may not cover all the Oreos, especially the ones on the edge, but that’s ok!

In two different mixing bowls, melt your green and light green melting wafers, following the instructions on the package.

Take a spoon (or add your melted wafers to a piping bag) and drizzle it across the top of the chocolate covered Oreo thins. Then, add your gold sugar sprinkles alongside your green drizzles.

Take a toothpick or skewer and drag it across the melted green wafers and sprinkles to create a swirl pattern.

Decorate with M&M’s and Lucky Charm marshmallows, then place the baking sheet in your refrigerator to set.

Once set, use a sharp knife to cut your leprechaun bark into chunks and serve!

How long does leprechaun bark last?

Store leprechaun cookie bark in an airtight container in the refrigerator for about a week. You can also make it ahead of time and freeze it! Place your completed chocolate bark in an airtight container and store in the freezer for 3 months.

TIP: Don’t keep your bark at room temperature for longer than 2 hours or the chocolate may get too soft.

How do I thaw the leprechaun bark after freezing?

Thaw it a room temperature either in its container or uncovered. If it forms condensation on the chocolate just dab it off with paper towels! Be sure to refrigerate it once its thawed.

I Can’t Find Oreo Thins. What do I do?

You can use regular Oreos in this chocolate bark recipe! Just know that you may have to use more melted chocolate to cover all the Oreos. You also don’t have to use mint Oreo thins. You can use golden Oreo thins or classic Oreo thins.

  • Line a 9×13 baking sheet with parchment paper and line your Oreos up in a single layer over the parchment paper. Set aside.
  • In a medium-sized heat-safe bowl, heat the semi-sweet chocolate chips according to package instructions. Don’t overheat the chocolate and make sure to stir it often to avoid the chocolate seizing and forming clumps.
  • Pour the melted chocolate over the Oreo layer and spread it out over and between the Oreos until smooth. It may not cover all of the Oreos and it’s okay to have some Oreos sticking out of the chocolate along the edges.
  • In 2 separate small bowls, heat the dark green and light green melting wafers according to package instructions. Use a spoon or piping bag to drizzle lines of dark and light green chocolate in lines or swirls over the melted chocolate layer.
  • Next, sprinkle the gold sugar sprinkles next to the green chocolate lines.
    Using a toothpick or skewer, drag the chocolate-making swirls and lines through the green chocolate and gold sugar sprinkles.
  • Finally, decorate with lucky charms rainbows and shamrocks, and mint m&ms and place the leprechaun bark in your refrigerator to chill for at least 1 hour.
  • Once the chocolate has chilled and is hard, use a large knife to cut the bark into small randomly shaped pieces or break it apart with your hands for jagged edges.
  • Serve chilled or at room temperature.
