You don’t have to wait until St. Patrick’s day to make this fun Lucky Charm’s ice cream, but it is the perfect sweet treat to celebrate the holiday! So, if you’re looking for a creative dessert idea for a party or just because, be sure to add this cereal ice cream to the list.

Easy No-Churn Ice Cream

  • For this ice cream recipe, you don’t need an ice cream maker. It’s no-churn ice cream that you can make with simple ingredients, a hand mixer, and a bowl.
  • The base of the ice cream is sweet cream and then toasted marshmallows and Lucky Charms cereal are mixed in. It’s so fun!
  • The kids can definitely help with this recipe – mine love to help with the cereal, use the hand mixer to mix the ice cream base, and stir in the cereal before the ice cream goes into the freezer.

I love to make no-churn ice cream and Lucky Charms ice cream is always a hit! Give it a try and I know you’ll have as much fun making it as you do eating it. It’s like the leftover cereal milk in a bowl, but turned into ice cream!

How to Make It

Whip the cream in a large bowl until it holds soft peaks. Add the condensed milk, salt, and mix at medium speed until combined.

Line a baking sheet with foil. Place the white mini marshmallows on the sheet pan. Broil the marshmallows for two minutes or until they are golden.

As soon as they are toasted, quickly scrape them off the foil with a silicone spatula and add them to the whipped cream mixture.

Mix at medium speed until the marshmallows are combined with the ice cream base. Cover the bowl with plastic wrap and freeze the ice for two hours. At this point, fold in the Lucky Charms cereal.

Cover the bowl again and freeze the ice cream for at least two hour or, ideally, overnight.

For serving, scoop the ice cream onto ice cream cones or into waffle cones or bowls. Sprinkle more Lucky Charms over the top for decoration.

Recipe Tips

  • For the best light and creamy ice cream, don’t over mix the whipped cream when you add the condensed milk. Mix just until combined – this will keep the whipped cream nice and fluffy.
  • You can toast the marshmallows in the oven or in a toaster oven. Just keep an eye on them because the can burn fast.
  • Don’t let the toasted marshmallows sit on the pan too long. They will cool and stick, so get them in the ice cream base while they’re still hot and easy to scrape off the foil.
  • I think this ice cream is best when it sits in the freezer overnight. So, if you’re making it for a party plan to make it a day in advance.
  • No churn ice cream will keep in the freezer for several weeks as long as it’s in an airtight freezer-safe container.
  • This recipe works with all kinds of cereal! You can swap the Lucky Charms for other kinds and make it all year long. We love Cinnamon Toast Crunch ice cream, too!
