There is no shortage of fun recipes to make around Valentine’s Day, and these brownie pops are one of my favorites to make! My kids always have a blast decorating the brownies and I tend to make a batch or two for them to gift to their classmates as a special treat.

If you love cake pops, then you’ll love these brownie pops too! These are simple enough for kids to bake, but so cute that they look gourmet. All you need to make these extra special is a store-bought brownie mix, some cheerful sprinkles, and a little love! Then, you can even wrap them in cellophane with a little bow and hand them out on Valentine’s Day as a sweet gift.

What You’ll Need to make Valentine’s Brownies

  • Brownie Mix – Just grab your favorite box of brownie mix, any will do!
  • White Chocolate Chips – You’ll want white chocolate specifically so that it brighten’s up the brownie pop.
  • Vegetable Oil – Use however much oil your box of brownie mix calls for.
  • Eggs – Depending on what brownie mix you use, it could change the amount of eggs you’ll need.
  • Water – Measure out water according to the instructions on your brownie mix.
  • Sprinkles – Check you seasonal aisle for cute Valentine’s Day sprinkles, and your baking aisle will most likely have regular red and pink sprinkles.
  • Popsicle Sticks – You can find these on the craft aisle at your grocery store, or at your local craft store.

How to Make Valentine’s Day Brownie Pops

Pour the contents of your brownie mix into a large mixing bowl and add water, oil, and eggs. Mix until thoroughly combined

Pour the brownie mixture into an 8×8 pan that has been covered with aluminum foil and sprayed with cooking spray. Bake according to the instructions on the package.

After baking, let the brownies cool for 10 minutes and then freeze them for 45-60 minutes.

Remove the brownie from the freezer and then carefully take the aluminum foil off of the block of brownies. Place the whole block onto a cutting board and slice them into 16 equal squares and then push a popsicle stick into each one.

Melt your white chocolate over a double boiler or pop it in the microwave and melt very carefully, making sure it doesn’t burn.

Quickly, but carefully, dip the brownies into white chocolate and add sprinkles to each one. Place them on parchment paper to set, and once each brownie is complete, place them in the fridge for 10 minutes to fully set the chocolate.

Storage Tips for Valentine’s Brownies

These fun brownies for Valentine’s Day probably won’t last long, but if you have leftovers store them in an airtight container for 3-4 days at room temperature, or a week in the fridge.

Can I use something other than popsicle sticks?

I find that popsicle sticks work best for this Valentine’s Day dessert, but you could also use circular lollipop sticks!

Pro-Tips for the best Valentine’s Day Brownie Pops

  • When dipping the brownies in the white chocolate, it will probably be easier to hold the brownie by hand instead of using the popsicle stick.
  • As you dip your brownies into the white chocolate, you’ll probably see that little pieces of brownie flake off into the chocolate. Not to worry! The sprinkles will cover those little specks quite well. If you’re not wanting to add sprinkles, use a spoon to drizzle your chocolate onto the Valentine’s brownies instead.
  • Don’t dip all the brownies into the chocolate and add sprinkles last, the chocolate will have begun to harden on the first few brownies and the sprinkles won’t stick. Add sprinkles to each brownies right after you have dipped them in chocolate!

Ingredients

  • 1 box brownie mix
  • Water oil, and eggs to make the brownies (quantities listed on the box mix)
  • 16 popsicle sticks found in craft stores
  • 12 ounces white melting chocolate
  • Valentine’s Day sprinkles of your choice

Instructions

  • Prepare an 8×8 inch baking dish by lining it with aluminum foil then spraying it with cooking spray. Set aside.
  • Prepare the brownies per the instructions (using ingredients listed) on the back of the brownie mix box.
  • Pour the brownie mix into the prepared baking dish and bake in the oven per the instructions on the box.
  • Once the brownies are done baking, set the dish on a cooling rack for 10 minutes. After 10 minutes, place the baking dish in the freezer for 45-60 minutes to chill.
  • Once the brownies have chilled, peel the aluminum from the sides of the baking dish and remove the entire block of brownies onto a cutting board covered in parchment paper.
  • Cut the brownies into 16 equal squares. Carefully push a popsicle stick into each brownie square.
  • Melt the white chocolate over a double boiler until it is smooth. Remove the bowl from the pot and set on the table near your brownie pops.
  • You will want to work quickly with the next part, and it is best to finish one brownie pop before moving on to the next. Dip a corner of each brownie into the white chocolate mixture. **Please see the note in the “tips” section!**.
  • Apply the sprinkles to the melted chocolate and set the brownie on a piece of parchment paper or cooling rack to let the white chocolate harden.
  • Once all the brownies have been dipped and sprinkles have been applied, you can set them in the refrigerator for an additional 10 minutes so that the white chocolate can harden.
  • Serve at room temperature.
