Ingredients Needed

  • Greek Yogurt – We recommend full fat yogurt. We used unsweetened yogurt and then added honey to our bark. If you use a sweetened Greek Yogurt skip the honey in this recipe.
  • Honey – Use this if you use unsweetened yogurt, if the yogurt is sweetened you can leave this out or adjust to your preference.
  • Fresh Fruit – We used strawberries and blueberries, but you could use raspberries, blackberries, peaches, mangos etc.
  • Granola Cereal – Honey Nut Granola Cereal was what was used in this recipe, but you can use your favorite granola.
  • Chocolate Chips – We used mini dark chocolate chips, but you could use semi-sweet. We recommend mini ones or chop up regular size chocolate chips. Another option is to melt them and drizzle it over the bark.
  • Lemon Zest – This will give it the perfect refreshing flavor, but if you have kids that don’t like lemon just skip it. It will still be delicious!

Steps to Prepare

  • Mix – Stir together Greek yogurt and honey until well mixed.
  • Assemble – Pour yogurt mixture on to a parchment lined 10 x 15 inch pan with sides. Top with fruit, chocolate chips and granola.
  • Freeze – Chill for 45-60 minutes
  • Break – Remove from freezer, slice, and pull the pieces a part from each other.
  • Freeze – Place in the freezer again and freeze for another 2 hours or overnight.
  • Storage – Store yogurt bark in a tightly sealed container in the freezer and remove right before serving.

FAQs

Can Greek yogurt be eaten after it’s been frozen?

Yes, it can, and it’s health benefits remain the same even if it has been frozen. However, as it thaws, the yogurt may separate a bit and become watery. So, these treats are best kept in the freezer and eaten immediately after removing them.

How long does frozen Greek yogurt last?

Frozen Greek yogurt can last up to 3 months in the freezer. However, these snacks are so good, I’m pretty sure you don’t have to worry about that problem!

What is the best way to store frozen yogurt bark?

Once it is frozen and cut in pieces, store them in a Ziploc bag or airtight container with a lid in the freezer. Then, when you want to serve them – or someone needs a quick snack – you can remove the exact amount you need. They are best when eaten right away.

Quick Tips!

This quick and easy snack can be customized to each person’s preference. Here are a few other options:

  • Add more or less honey based on how sweet you’d like the frozen yogurt.
  • Add in a tsp of vanilla to give it a bit of vanilla flavor.
  • Use different flavor of Greek Yogurt to mix it up, just leave out the sweetener if it’s already sweetened.
  • Choose a different sweetener – like agave or maple syrup – instead of honey, if you choose.
  • Add a different combination of fresh fruit – like raspberries, blackberries, peaches, or mangos.
  • Add crushed nuts like almonds or pecans.
  • Instead of adding mini chocolate chips, melt some chocolate and drizzle it over the top.
  • Sprinkles a little shredded coconut flakes on it.
  • Get the kids involved. Let them create their own personalized treat in their own little pans lined with parchment paper. It would be a great party or Summer time activity. Call it a “yogurt bark bar”!
  • Remember to use a pan with sides on it for your yogurt bark. You don’t want it running over the sides into your freezer!
