Watermelon Rice Krispies Treats

These Watermelon Rice Krispie Treats are one of my favorite no-bake activities to make with my kids in the summer. They get to help with the fun parts (stirring, pressing, decorating), and we end up with the cutest watermelon-shaped Rice Krispie treats to enjoy together as a family.

Watermelon Rice Krispie Treats are the kind of kitchen project that hits the sweet spot for kids and parents. Hands-on, colorful, no oven required, and the finished product is good enough to actually eat. We make two batches of Rice Krispies treats (one green, one pink), press them into a round cake pan to form a watermelon shape, dot the middle with chocolate “seeds,” and slice them into triangles that look like real watermelon wedges. This is such a fun treat to serve at summertime birthday parties, bring on beach trips and send for the last day of school celebrations! Not to mention, these always fly off the table at school bake sales!

What Age Is This Activity For?

This activity is best for kids ages 5 and up, though younger kids can definitely help with parts of it. Adults handle the stovetop work (melting butter and marshmallows), and kids take over for the fun parts: pressing the cereal mixture into the pan, choosing how dark to make the colors, and pressing the chocolate “seeds” into the pink center.

Ingredients Needed

  • Unsalted butter – This is what gives the treats their classic rich flavor.
  • Mini marshmallows – Mini sized white marshmallows will melt the faster and more evenly than large ones.
  • Vanilla extract – Vanilla is a great way to enhance the overall flavor of this Rice Krispie treat.
  • Kosher salt – Balances the sweetness of these treats but if you use salted butter, leave this out.
  • Gel food coloring – Gel food coloring offers a more vibrant finish than a liquid food coloring, but use what you have. Just know if you use a liquid that it might make the marshmallow mixture a bit watery.
  • Rice Krispies cereal – Use your favorite brand of crispy rice cereal. Make sure it’s fresh for the best texture!
  • Mini chocolate chips – These are readily available in stores, but brown mini M&Ms are fun to use, too!

Variations and Decorating

  • Mini watermelons – Use a greased or lined muffin tin to portion individual servings.
  • Different fruits – Switch up the gel food coloring and make different fruits. Use orange and white for orange slices, green and white with chocolate chip seeds for kiwi or even yellow and brown for pineapple wedges.
  • Faces – Use chocolate chips to create fun faces and images in the center for a silly twist.
  • Cookie cutters – Use letter or number cookie cutters to cut colorful shapes for younger kids.
  • Stripes – For a new look, create stripes or press other shapes into the cake pan with the help of cookie cutters.

How To Make Watermelon Rice Krispies Treats

  1. Mix green portion. Add butter to a large pot over low heat and melt it gently. Then add mini marshmallows and stir until melted and smooth. Stir in vanilla extract, a pinch of kosher salt, and green gel food coloring until the marshmallow mixture resembles a watermelon rind. Remove the pot from the heat, add Rice Krispies cereal, gently fold until the cereal is evenly coated.
  2. Create green “rind”. Press green cereal mixture around the outside edge of the prepared 9-inch round cake pan to form a thick green rind border. Leave the center open for the pink watermelon layer.
  3. Mix red “fruit” portion. Use another pot or saucepan and add butter over low heat and melt the butter gently. Add mini marshmallows, stirring until melted and smooth. Stir in pure vanilla extract, kosher salt, and pink or red gel food coloring. Remove the pot from the heat, add Rice Krispies cereal, and gently fold until the cereal is evenly coated.
  4. Create fruit center. Add the pink cereal mixture into the center of the pan, gently pressing it against the green rind to ensure the whole pan is filled evenly.
  5. Add seeds. While the treats are still slightly warm, press mini chocolate chips into the pink center.
  6. Leave to set. Let the treats set at room temperature for about 1 hour, then lift them out of the pan.
  7. Slice and enjoy. Cut into 8 triangular wedges so each piece looks like a little watermelon slice, then serve!

Storage

Store leftover watermelon Rice Krispie treats in an airtight container at room temperature for up to 3 days. If storing in a stack, place parchment between layers so they do not stick together.

Fridge: I don’t recommend storing in the fridge because they will turn tough.

Freezer: Wrap tightly in plastic wrap then store in a freezer bag or airtight container. Thaw on the counter for about 30 minutes before serving.

Pro Tips

  • Rice Krispie treats are best made the day before serving for the softest, gooiest texture. Slice the day you plan to serve!
  • I recommend measuring out ingredients ahead of time with the kids so everything is organized and ready to go and there are no distractions when it comes time to use the stove top.
  • Place a cookie sheet or silicon mat under the pan to catch any sticky marshmallow mixture and keep clean up to a minimum.
  • Trace and cut a piece of parchment to put in the bottom of the cake pan for extra easy removal.
  • Slice and put a popsicle stick into the bottom to create little Rice Krispie treat pops or press the mixture into push-pop containers.
  • To keep the mixture from sticking to fingers while pressing it into the cake pan, lightly butter or spray hands with cooking spray before doing so.
  • Dip the sharp knife in warm water between slices to keep the cuts clean and neat.

I love this activity because it sneaks in a few lessons without anyone noticing. Kids practice measuring, learn about mixing colors (yes, gel food coloring is way more vibrant than liquid), and get to use their hands to shape something edible. Plus they get to brag about something they made themselves at the next family gathering. Always a win.

Ingredients

For the Green Rind

  • 2 Tablespoons unsalted butter
  • 2 cups mini marshmallows
  • ¼ teaspoon pure vanilla extract
  • pinch kosher salt
  • Green gel food coloring
  • 1 ½ cups Rice Krispies cereal

For the Pink Center

  • 4 Tablespoons unsalted butter
  • 4 cups mini marshmallows
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon kosher salt
  • Pink or red gel food coloring
  • 4 ½ cups Rice Krispies cereal
  • 2 Tablespoons brown mini M&M’s or mini chocolate chips for seeds

Instructions

  • Prepare a 9-inch round cake pan with nonstick cooking spray. Set aside.

Green Rind

  • Add 2 Tablespoons of unsalted butter to a large pot over low heat and melt it gently. Then add 2 cups mini marshmallows and stir until melted and smooth.
  • Stir in ¼ teaspoon of pure vanilla extract, a pinch of kosher salt, and green gel food coloring until the marshmallow mixture resembles a watermelon rind.
  • Remove the pot from the heat, add 1 ½ cups Rice Krispies cereal, and gently fold until the cereal is evenly coated.

Pink Center

  • Stir in 1 teaspoon of pure vanilla extract, ¼ teaspoon of kosher salt, and pink or red gel food coloring until the marshmallow mixture resembles the inside of a watermelon.
  • Remove the pot from the heat, add 4 ½ cups Rice Krispies cereal, and gently fold until the cereal is evenly coated.
  • Press the pink cereal mixture into the center of the pan, gently pressing it against the green rind to ensure the whole pan is filled evenly.
  • While the treats are still slightly warm, press 2 tablespoons of brown mini M&M’s or mini chocolate chips into the pink center so they look like watermelon seeds.
  • Let the treats set at room temperature for about 1 hour, then lift them out of the pan.
  • Slice into 8 triangular wedges so each piece looks like a little watermelon slice, then serve and ENJOY!
