Why This Recipe Works

We’re making the best rice krispies treats and giving them a Grinch make-over! 

This is an easy no-bake Christmas cereal treat recipe. My kids love to help me make them.

They’re soft with ooey-gooey marshmallows and tinted with green food coloring. Add red heart sprinkles, and everyone will know they’re Grinch treats.

They’re coated in green chocolate candy melt, so they look great on a dessert platter or packaged for gifts.

Grinch Rice Krispies Treats Ingredients

Ingredients

  • Mini marshmallows – I like minis, but any size will work. You need 10 ounces total.
  • Butter – you’ll need some for greasing the pan and the rest for the treats.
  • Vanilla extract – this adds a hint of flavor, but if you don’t have any on hand you can omit it.
  • Rice Krispies cereal
  • Green food coloring
  • Green melting chocolate – look for these candy melts at craft stores or online.
  • Coconut oil – this is added to the melted chocolate to thin it so it coats the treats perfectly.
  • Heart sprinkles – find them in the baking aisle, at craft stores or online.

Recipe Instructions

Butter a 9×13-inch baking pan with butter and set it aside.

Place the marshmallows and butter in a large saucepan. Warm them over medium heat and stir them occasionally until smooth.

Add the vanilla and food coloring. Stir until the mixture is evenly tinted and then stir in the cereal and stir until combined.

Transfer the mixture to the prepared pan. Coat your hands or the spatula with cooking spray and press the mixture into the pan, so it’s in an even layer. Using the spray will help keep it from sticking to the spatula or your hands.

Combine the candy melts and coconut oil in a microwave-safe bowl. Warm them in the microwave following the package instructions.

Once the chocolate is melted, pour it over the treats in the pan. Spread it into a smooth and even layer. Sprinkle the hearts over the top and then place the pan in the refrigerator for 15 to 20 minutes. 

Once the topping is set, slice into bars and enjoy!

Can I freeze Christmas rice krispies treats?

Yes, you can, but they are much better the day they are made. If you want to freeze them, place them in the freezer for one hour. Then remove them from the freezer and take the treats out of the pan, wrap them with two layers of plastic wrap and a layer of aluminum foil. They will keep for up to six weeks in the freezer.

I can’t find green candy melts. What else can I use?

You can use white chocolate candy melts and add green food coloring.

Why do I need to add coconut oil to the melted chocolate?

It helps thin out the chocolate so it will spread evenly over the cereal treats.

How should you store cereal treat bars?

It’s best to store them in an airtight container at room temperature. I like to stack them with wax paper or parchment paper separating the layers. They will keep well for up to three days.

Ingredients

  • 10 ounces mini marshmallows
  • 4 Tablespoon butter
  • 1 teaspoon vanilla extract
  • 5 ½ cups rice krispie cereal
  • 14 drops green food coloring
  • 12 ounces green melting chocolate
  • 1 teaspoon coconut oil
  • 2 Tablespoons heart sprinkles

Instructions

  • Grease a 9×13 inch baking pan with butter, set the pan aside.
  • In a large saucepan, combine the mini marshmallows and butter over medium heat. Cook until all the marshmallows are melted, making sure to stir occasionally.
  • Stir the vanilla extract and food coloring into the marshmallows. Once all the marshmallows are green, add in the rice krispies and stir until the cereal is coated.
  • Pour the mixture into the prepared pan, spray your hands or spatula with nonstick spray and press the rice crispy into an even layer.
  • Place the chocolate and coconut oil into a medium heat-safe mixing bowl. Microwave for 30-second intervals until the chocolate is melted, making sure to stir after every 30 seconds. .
  • Pour the chocolate over the Rice Krispies and spread it in an even layer.
  • Sprinkle the hearts all over the top of the chocolate. Place the pan in the fridge and allow the chocolate to set up for 15 to 20 minutes. Cut into squares and enjoy.
