Watermelon Rice Krispies Treats

Ingredients

For the Green Rind

  • 2 Tablespoons unsalted butter
  • 2 cups mini marshmallows
  • ¼ teaspoon pure vanilla extract
  • pinch kosher salt
  • Green gel food coloring
  • 1 ½ cups Rice Krispies cereal

For the Pink Center

  • 4 Tablespoons unsalted butter
  • 4 cups mini marshmallows
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon kosher salt
  • Pink or red gel food coloring
  • 4 ½ cups Rice Krispies cereal
  • 2 Tablespoons brown mini M&M’s or mini chocolate chips for seeds

Instructions

  • Prepare a 9-inch round cake pan with nonstick cooking spray. Set aside.

Green Rind

  • Add 2 Tablespoons of unsalted butter to a large pot over low heat and melt it gently. Then add 2 cups mini marshmallows and stir until melted and smooth.
  • Stir in ¼ teaspoon of pure vanilla extract, a pinch of kosher salt, and green gel food coloring until the marshmallow mixture resembles a watermelon rind.
  • Remove the pot from the heat, add 1 ½ cups Rice Krispies cereal, and gently fold until the cereal is evenly coated.
  • Press the green cereal mixture around the outside edge of the prepared 9-inch round cake pan to form a thick green rind border, leaving the center open for the pink watermelon layer.

Pink Center

  • Use another pot or saucepan and add 4 Tablespoons of unsalted butter. Place it over low heat and melt the butter gently.
  • Add 4 cups of mini marshmallows and stir until melted and smooth.
  • Stir in 1 teaspoon of pure vanilla extract, ¼ teaspoon of kosher salt, and pink or red gel food coloring until the marshmallow mixture resembles the inside of a watermelon.
  • Remove the pot from the heat, add 4 ½ cups Rice Krispies cereal, and gently fold until the cereal is evenly coated.
  • Press the pink cereal mixture into the center of the pan, gently pressing it against the green rind to ensure the whole pan is filled evenly.
  • While the treats are still slightly warm, press 2 tablespoons of brown mini M&M’s or mini chocolate chips into the pink center so they look like watermelon seeds.
  • Let the treats set at room temperature for about 1 hour, then lift them out of the pan.
  • Slice into 8 triangular wedges so each piece looks like a little watermelon slice, then serve and ENJOY!

Notes

Store leftover watermelon Rice Krispie treats in an airtight container at room temperature for up to 3 days. If storing in a stack, place parchment between layers so they do not stick together.
Fridge: I don't recommend storing in the fridge because they will turn tough.
Freezer: Wrap tightly in plastic wrap then store in a freezer bag or airtight container. Thaw on the counter for about 30 minutes before serving.
