Why we love these Spring Cookies!

  • This recipe starts with an easy sugar cookie recipe. They’re soft and chewy!
  • The cookie dough is rolled into balls and pressed. You don’t need a rolling pin, and you don’t need cookie cutters.
  • You only need three ingredients for the icing.
  • You don’t need a piping bag or tips – the cookies are dipped in the icing to make it really easy!
  • I like to tint the frosting with food coloring and add fun sprinkles for the finishing touch.

Sugar Cookie Ingredients

  • Granulated sugar
  • Softened butter
  • Large eggs
  • Milk
  • Vanilla extract
  • All-purpose flour
  • Baking powder
  • Salt

Helpful Tools

How to Make Them

Wet Ingredients: Cream the butter and sugar with an electric mixer until light and fluffy. Add the egg, milk, vanilla, and mix until smooth.

Dry Ingredients: Mix in the flour, baking powder, and salt. Mix until the dough forms.

Roll: Make cookie dough balls and place them on a prepared baking sheet.

Press: Use a drinking glass to press the dough balls into discs that are 1/2″ thick.

Bake: Place the cookie sheet in the oven and bake the cookies for 9 minutes or until the tops start to turn golden. Cool them on a wire rack before icing.

How to Decorate the Cookies

Once you’ve made the cookies and they’ve cooled – it’s time to decorate!

Make the Icing: Whisk powdered sugar, vanilla, and milk in a mixing bowl.

Tint: Divide the icing into four seperate bowls and tint each bowl one color. I use green, pink, yellow, and blue food coloring.

Dip and Decorate: Dip the top of each cookie in an icing color. While the icing is wet, add the sprinkles on top

Set: Allow the icing to harden at room temperature before eating or storing the cookies.

What if my icing is to thick?

If your icing is too thick, add a little bit of milk at a time to thin it. It should be thin enough to dip the cookies in it and get a good coating but not so thin that the icing runs off.

How should I store these cookies?

Keep the spring sugar cookies in an airtight container at room temperature. The should keep for two to three days.

Can I freeze these cookies?

You can freeze the plain cookies in a freezer container for up to two months. Thaw them at room temperature and then ice them as instructed.

Recipe Tips

Mixing: When you add the dry ingredients, mix only until the dough comes together. If you over mix the cookie dough, your sugar cookies won’t be as tender.

Variations: You can switch up the colors to match any holiday! Think orange for Halloween, red and green for Christmas, and red, white, and blue for 4th of July. Or, keep the icing white and use sprinkles to match the holiday or event.
