Ingredients for this Ice Cream Cone Cupcakes Recipe

  • Yellow cake mix – You can change up what cake mix you use if you want! Yellow cake mix works, as well as white cake mix, funfetti, strawberry, and so many others.
  • Vegetable oil – Use however much oil that the box of cake mix calls for. You can also swap vegetable oil for melted butter, olive oil, or any other oil.
  • Water – Follow the instructions of the back of the cake mix box and measure out the amount of water it calls for.
  • Eggs – Allow your eggs to come to room temperature before mixing them into the cake batter so that they mix more easily.
  • White frosting – Just grab a can of your favorite frosting from the store! It doesn’t have to be white frosting if you don’t want.
  • Ice cream cones – Use flat bottomed cones that stand up on their own so that the cupcakes can back directly in the cone.
  • Sprinkles – Choose your favorite sprinkles and use them to top the frosting with extra fun!

How to Make Ice Cream Cone Cupcakes

  1. To begin prepping everything, preheat your oven to 350 degrees and arrange ice cream cones by placing one into each cup of a muffin pan. If you don’t have a muffin pan, you can use a baking dish.
  2. Prepare the cupcake batter according to the instruction on the package. It will likely call for egg, vegetable oil, and purified water.
  3. Pour the cake batter into the each ice cream cone, filling it just above the “handle” of the cone. Don’t overfill or the cupcake will ooze over the edges when it bakes.
  4. Carefully place the muffin pan into the oven and bake for 12-15 minutes. The cupcakes are done once they begin turning a golden brown and a toothpick can be inserted in them and come out clean. Place on a cooling rack to cool.
  5. After the cupcakes are completely cooled, place the frosting in a piping bag and pipe frosting onto each ice cream cone cupcake.
  6. Top with your favorite sprinkles, and enjoy!

How to Store Leftover Ice Cream Cone Cupcakes

Place leftovers in an airtight container and store in the fridge for up to 4 days. I do not recommend freezing these cupcakes!

Can I make my own frosting?

Of course! Homemade buttercream frosting would taste delicious on these. You can use the frosting recipe from these Christmas cupcakes and just omit the green food coloring. Feel free to use another favorite frosting recipe too. Cream cheese frosting would taste super good!

  • To make these look even more like ice cream, drizzle the frosting with chocolate syrup and top each one with a maraschino cherry.

Ingredients

  • 15.25 ounces yellow cake mix (1 box)
  • 2 eggs
  • ½ cup vegetable oil
  • 1 cup water
  • 24 ice cream cups
  • 2 tubs store-bought icing, white (16 ounces each)
  • ¼ cup rainbow jimmies sprinkles

Instructions

  • Preheat your oven to 350°F. Arrange your ice cream cups in a muffin pan or baking dish.
  • Prepare your cake batter using the instructions and ingredients on the box. Ours called for (3) eggs, ½ cup of vegetable oil, and 1 cup of purified water.
    Pour the prepared cake batter into each ice cream cup, filling it to just above the neck of the handle. Filling to this level will allow the batter to rise without oozing over the edges.
  • Carefully place the muffin pan on the middle rack and bake for 12 – 15 minutes or until a cake tester or toothpick comes out clean. Allow them to cool on a cooling rack for 20 minutes.
  • Place your store-bought frosting in a piping bag with a #1M tip. Pipe each ice cream cone cupcake. Sprinkle with your favorite sprinkles.
  • Serve and ENJOY!
