Lucky Charms Ice Cream

Easy no churn ice cream with toasted marshmallow flavor and Lucky Charms cereal.

Ingredients

  • 1 cup heavy whipping cream
  • ½ can sweetened condensed milk
  • pinch salt
  • 1 cups mini marshmallows
  • 1 cup Lucky Charms cereal
  • 1 cup Lucky Charms marshmallows
  • Optional - waffle cones or bowls for serving and additional Lucky Charms marshmallows for garnish.

Instructions

  • In a large bowl whip the heavy whipping cream until soft peaks form.
  • Slowly combine the condensed milk and pinch of salt. Mix on medium speed until combined.
  • Line a small cookie sheet or toaster oven tray with foil. Place the mini marshmallows (not the Lucky Charms Marshmallows) on the tray. Broil in the oven or toaster oven for 2 minutes or until golden in color but not burnt. Do not walk away from the oven or toaster oven keep a close eye on the marshmallows and pull them out before they burn.
  • When the marshmallows have toasted quickly scrape the foil with a silicone spatula and get all the marshmallows into the ice cream custard mixture.
  • Mix on medium speed until combined.
  • Cover with plastic wrap and freeze for 2 hours.
  • After 2 hours the ice cream will resemble a soft-serve texture, fold in the Lucky Charms cereal and marshmallows.
  • Freeze for an additional 2 hours or overnight.
  • Scoop into waffle cones or bowls and enjoy! Garnish with additional Lucky Charms if desired!

Notes

  • For the best light and creamy ice cream, don’t over mix the whipped cream when you add the condensed milk. Mix just until combined – this will keep the whipped cream nice and fluffy.
  • You can toast the marshmallows in the oven or in a toaster oven. Just keep an eye on them because the can burn fast.
  • Don’t let the toasted marshmallows sit on the pan too long. They will cool and stick, so get them in the ice cream base while they’re still hot and easy to scrape off the foil.
  • I think this ice cream is best when it sits in the freezer overnight. So, if you’re making it for a party plan to make it a day in advance.
  • No churn ice cream will keep in the freezer for several weeks as long as it’s in an airtight freezer-safe container.
  • This recipe works with all kinds of cereal! You can swap the Lucky Charms for other kinds and make it all year long. We love Cinnamon Toast Crunch ice cream, too!
