Chocolate Covered Frozen Bananas

Ingredients

Chocolate Covered Frozen Bananas

  • 10 wooden skewers or popsicle sticks
  • 5 large bananas
  • 24 ounces semi-sweet chocolate chips
  • 1 Tablespoon coconut oil
  • Assorted toppings: sprinkles, chopped nuts, coconut, etc

Chocolate Covered Frozen Banana Bites

  • 3-4 medium-sized ripe bananas
  • 1 cup chocolate chips
  • 1 Tablespoon coconut oil
  • Assorted toppings: sprinkles, chopped nuts, coconut, etc

Instructions

Whole Bananas

  • Line a baking sheet with a piece of parchment or waxed paper to prevent sticking. Set aside.
  • Peel the bananas and cut them in half. Skewer the cut end of each banana piece with a wooden skewer. Push the skewer in until it is stable. 
  • Place skewered bananas on a prepared baking sheet and freeze until firm, about 1 hour. 
  • Place any toppings you would like to sprinkle on bananas in shallow bowls or pie plates.
  • Place chocolate and coconut oil in a microwave-safe bowl and microwave on high in 30-seconds increments, stirring between each, until melted. Or, melt it on the stovetop in a double boiler. 
  • Take one skewered banana and hold it over the bowl of melted chocolate. Use a large spoon or ladle and spoon generous amounts of chocolate over the banana. Rotate the banana as you are spooning until it’s covered. Work quickly because the banana is cold and the chocolate will set quickly. Let excess chocolate drip back into the bowl. 
  • Move the banana over the top of parchment paper in a clean place then sprinkle desired toppings over the chocolate. Then lay down on a baking sheet to dry. Repeat with all bananas. 
  • Freeze dipped bananas for at least 30 minutes. Enjoy frozen!

Banana Bites

  • Line a baking sheet with a piece of parchment or waxed paper to prevent sticking. Set aside.
  • Slice bananas into bite size pieces, about ½’’ each. 
  • Place banana slices in a single layer flat on the covered baking sheet, without touching. Freeze for at least 30 minutes. 
  • Place chocolate chips and coconut oil in a microwave-safe bowl and microwave on high in 30-seconds increments, stirring between each, until melted. Or, melt it on the stovetop in a double boiler. 
  • Place a piece of banana on a fork, so it’s resting on the tines. Then dip it into the chocolate. Lift it out and let any excess chocolate drain through the fork tines. 
  • Place chocolate dipped banana back on the baking sheet. Repeat until all bananas are dipped. 
  • If you would like toppings on the bananas, sprinkle them on before the chocolate dries.
  • Freeze dipped banana slices for at least 30 minutes. Enjoy frozen!
