Cook Time: 8 minutes
Cooling Time: 1 hour
Total Time: 1 hour 18 minutes
Servings: 22 cookies

Ingredients

  • 1 box of brownie mix
  • ½ cup all-purpose flour
  • 2 eggs
  • ¼ cup vegetable oil
  • 2 tablespoons water
  • 1 tub of store-bought fudge frosting
  • 44 mini pretzels
  • 44 candy eyeballs
  • 22 red M&Ms

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Line baking sheet with parchment paper and set aside.
  • In the bowl of a stand mixer, fitted with the paddle attachment, combine brownie mix, flour, oil, 2 eggs, and water, mix until well combined.
  • Using a cookie scoop, scoop dough onto a prepared baking sheet.
  • Bake for 8 minutes, do not overbake these cookies, allow the cookies to rest on the baking sheet for about 2 minutes.
  • Carefully remove and place on a wire cooling rack. Allow cookies to cool completely before frosting.
  • Frost cookies with approximately 1 tablespoon of frosting (adjust to liking).
  • Place two pretzels at the top of the cookie for antlers.
  • Add red M&M for the nose.
  • Place 2 candy eyeballs between the nose and the antlers.

Notes

  • This is a very thick dough, I would not hand mix with a whisk or even use the whisk attachment on the stand mixer.
  • It is really important to not overbake these cookies. You want to keep the center as fudgy as possible. Watching cooking time carefully.
TIPS FOR THE BEST BROWNIE MIX COOKIES
The cookie dough is very thick so I recommend using either a stand mixer with a paddle attachment (not the whisk attachment) or a hand mixer to make the dough. It will be very hard to mix it well by hand.
Keep an eye on the cookies while they bake. You don’t want to overbake them because they will dry out and not be as fudgy. So once they are set around the edges and on top they’re ready.
Wait to frost the cookies until they are completely cooled. Otherwise the frosting will melt and make a mess!
HOW SHOULD YOU STORE BROWNIE MIX?
If you stack these cookies, the decorations and frosting will get smooshed so store them in a single layer. You can use shallow airtight containers or a couple 9×13″ baking pans covered with plastic wrap.
Store the cookies at room temperature and plan to enjoy them within a day of making them for the best flavor and texture.
