Brownie Bites

Ingredients

  • 12 Tablespoons unsalted butter melted and cooled
  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 3 eggs room temperature
  • 1 Tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Lightly grease a 24 cup mini muffin pan and set aside.
  • In a mixing bowl, combine melted butter, and both sugars and mix until smooth.
  • Add the eggs and vanilla and mix for another 2 minutes. Then add the salt and baking powder and mix until combined.
  • Add in the cocoa powder and flour and mix until combined. Mix in the chocolate chips.
  • Scoop the batter into the prepared muffin pan. This makes 44-48 bites so you will have to bake in two batches or use two pans.
  • Place pan in preheated oven at 350 degrees Fahrenheit. Bake for 12-15 minutes, or until the brownies are set.
  • Let sit in the pan for 10 minutes then take a knife and cut around the edges of each muffin and remove them from the pan and let them finish cooling on the cooling rack. Repeat with remaining brownie batter.
