Pizza Muffins Recipe

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ cup =Parmesan cheese grated
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 1 ¼ cups milk
  • 2 eggs beaten
  • 1 cup Mozzarella cheese shredded
  • ¾ cup pepperoni chopped
  • pizza sauce for dipping

Instructions

  • Preheat the oven to 375 degrees Fahrenheit. Spray a muffin pan with cooking spray and set aside.
  • Add the all-purpose flour, baking powder, grated Parmesan, garlic powder, Italian seasoning, salt and pepper to a bowl and whisk to combine.
  • Add in the milk, beaten egg, mozzarella cheese, pepperoni and mix with a spatula until just incorporated. Do not overmix.
  • Scoop batter into the greased muffin pan and bake for 18-20 minutes in preheated oven at 375 degrees Fahrenheit.
  • Serve immediately with pizza sauce for dipping.

Notes

Fridge: Store leftover pizza muffins in an airtight container for up to 5 days. You may want to put them in the microwave to warm up and soften a little bit.
Freezer: Store in an airtight container or freezer bag. Leave in the fridge overnight to thaw before serving.
