Jack O Lantern Quesadillas Square Image

Jack O Lantern Quesadillas

These Jack-o'-Lantern Quesadillas are one of the cutest Halloween lunches I make with my kids every October. Bright orange cheddar cheese melted between two pumpkin-shaped flour tortillas, with a spooky jack-o'-lantern face carved into the top so the melted orange cheese glows through like a real Halloween pumpkin.

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Servings: 6 Quesadillas

Ingredients

  • 4 burrito-size flour tortillas
  • 1½ cups cheddar cheese shredded

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.
  • Use a pumpkin-shaped cookie cutter to cut 3 pumpkins from each burrito-size tortilla. You will need 12 pumpkin-shaped tortilla pieces to make 6 quesadillas.
  • Place 6 of the pumpkin-shaped tortillas on a nonstick baking sheet. Add ¼ cup of shredded cheddar cheese to each one, spreading the cheese over the tortilla while leaving a little room around the edges.
  • Use a sharp paring knife to carefully cut jack-o’-lantern eyes, a nose, and a mouth from each of the remaining 6 pumpkin tortillas. Have fun making different faces if you would like. Place one face tortilla over each cheese-covered pumpkin and gently press it into place.
  • Place in preheated oven at 350 degrees Fahrenheit. Bake for 5 to 7 minutes, or until the cheese is melted and the tortillas are warmed through. Keep an eye on them near the end of the baking time so the cheese does not melt too much and ooze out around the edges. Serve warm.

Notes

Fridge: Homemade quesadillas are best served right away but sometimes there are leftovers! Once cool, store in a single layer in an airtight container for up to 4 days.
Freezer: Wrap individual quesadillas in plastic wrap and store in an airtight container or freezer bag. Thaw in the fridge overnight before reheating.
For a more crisp exterior, reheat in the oven or in the air fryer until hot through. The microwave works, but the tortilla will be pretty soft.
