Mini Pancake Bites

Quick and easy mini pancake bites topped with your favorite pancake toppings for an easy breakfast recipe!

Ingredients

  • 2 cups all purpose flour
  • 1 Tablespoons granulated sugar
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups buttermilk
  • 2 eggs
  • 4 Tablespoons butter melted
  • 1 teaspoon vanilla
  • Toppings: cereal, chocolate chips, fruit, jelly, bacon, sprinkles

Instructions

  • Heat the oven to 400° Fahrenheit. Spray a mini muffin pan. Set pan aside for later.
  • In a large mixing bowl, combine the flour, sugar, baking powder and salt.
  • In a small bowl beat the buttermilk, eggs, butter and vanilla together. Slowly add the flour mixture to the wet mixture gently stirring until just combined. Do not overmix.
  • Spoon the batter into the prepared mini muffin pan, filling them to the top.
  • Sprinkle desired toppings on each of the mini pancakes.
  • Place the mini muffin pan in the preheated oven at 400° Fahrenheit and bake for 10 minutes or until golden brown on the top.
  • Remove and serve with warm maple syrup.

Notes

  • Chocolate: Use milk chocolate, dark chocolate, white chocolate, or semi-sweet chocolate chips.
  • Sprinkles: These are great for holidays – just match the sprinkles to the holiday theme!
  • Nuts: Chopped nuts like walnuts, almonds, and pecans are all great choices.
  • Meat: Make sweet and savory pancake bites and sprinkle crumbled cooked bacon or crumbled cooked breakfast sausage on top.
  • Fruit: Drop some blueberries, chopped strawberries, or raspberries on top!
  • Cereal: Try Fruity Pebbles or Cocoa Pebbles on top for a fun twist.
  • Jelly: Swirl some jelly on top of the batter or top your baked pancake bites with some.
