4th of July Cake Mix Cookies

Easy Red, White and Blue Cookies are so festive for the 4th of July! They start with a cake mix for delicious soft cookies.

Ingredients

  • 1 box vanilla or white cake mix
  • 2 eggs
  • cup vegetable oil
  • 1 teaspoon vanilla
  • 12 ounces red melting chocolate
  • 12 ounces white melting chocolate
  • 12 ounces blue melting chocolate
  • Red white, and blue sprinkles of choice

Instructions

  • In a large bowl, add the cake mix, eggs, vegetable oil, and vanilla. Stir until well incorporated.
  • Chill the dough for 20 minutes.
  • Meanwhile, preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  • When the dough is done chilling, scoop the dough into 1- to 1 ½-inch balls and place them on the prepared baking sheet.
  • Place baking sheet in preheated oven at 350 degrees Fahrenheit. Bake for 8-10 minutes in the preheated oven. Do not overbake.
  • Let the cookies cool completely before the next step (important).
  • Melt each of the red, white, and blue melting chocolates in separate bowls in the microwave in 30 second intervals until the consistency is smooth and creamy.
  • Line a baking sheet with parchment paper.
  • Dip half of a cooled cookie into the melted chocolate. Set down on parchment lined baking sheet. Immediately add the sprinkles of your choice. *Handle the cookies with care as they tend to be delicate*.
  • Let the melting chocolate set naturally or pop the cookies into the refrigerator to set faster.

Notes

Cake mix cookies tend to be very delicate. Make sure they are completely cooled before attempting to dip them in the chocolate. Handle with care!
Don’t skip chilling the dough. This is necessary so your cookies don’t spread too much while they’re baking.
Keep an eye on the cookies while they bake and take them out once they are set around the edges and baked but not browned on top. If you overbake them they won’t be as soft.
Decorated cake mix cookies will keep well for several days at room temperature. I like to store them in an airtight container with wax paper separating the cookies (if you stack them). This will keep them from sticking to each other.
If you want to freeze the plain cookies, you can! Place them in a freezer safe container and they will keep well for up to two months. Thaw them at room temperature before decorating.
