Spring Sugar Cookies

Ingredients

Sugar Cookies

  • 1 ½ cups sugar
  • cup butter
  • 2 eggs
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 3 ¼ cups flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt

Icing

  • 2 cups powdered sugar
  • 3-4 Tablespoons milk
  • 1 teaspoon vanilla

Decorations

  • sprinkles of your choice
  • green pink, yellow, and blue food coloring

Instructions

Cookie Directions:

  • Preheat the oven to 350º Fahrenheit.
  • Prepare a baking sheet by lining it with parchment paper and set aside.
  • In a large mixing bowl, cream butter and sugar together with a hand mixer until light and fluffy.
  • Add egg, milk, and vanilla. Mix again until smooth.
  • Add flour, baking powder, and salt. Mix until dough forms.
  • Roll dough into 1-inch balls and place them onto a prepare baking sheet.
  • Using a glass dipped in flour, press each dough ball down until it is about 1/2-inch thick.
  • Bake for 9 minutes or until tops begin to brown.
  • Allow cookies to cool completely.

Icing Directions:

  • Whisk powdered sugar, milk, and vanilla together. If icing is too thick, add more milk a little at a time until it reaches desired consistency. If icing is too thin, add more powdered sugar.
  • Split icing between 4 small bowls then add 2 drops of color food coloring to each bowl, creating 4 different colored icing. Dipped cooled cookies into icing.
  • Immediately add sprinkles of your choice.
  • Allow icing to harden and serve.
  • Store in an airtight container.

Notes

HOW SHOULD I STORE THESE COOKIES?

Keep the spring sugar cookies in an airtight container at room temperature. The should keep for two to three days.

CAN I FREEZE THESE COOKIES?

You can freeze the plain cookies in a freezer container for up to two months. Thaw them at room temperature and then ice them as instructed.

RECIPE TIPS

Mixing: When you add the dry ingredients, mix only until the dough comes together. If you over mix the cookie dough, your sugar cookies won’t be as tender.
Variations: You can switch up the colors to match any holiday! Think orange for Halloween, red and green for Christmas, and red, white, and blue for 4th of July. Or, keep the icing white and use sprinkles to match the holiday or event.
